Faux Roe Recipe
Everyone thinks of roe and caviar as high class delicacies known for their rich flavor, rarity, and high price tag. This faux roe recipe gives you the delicate taste and texture of roe but without the expensive price tag! The use of molecular gastronomy makes this a fun project as well. Use the faux roe as a dip, on crackers with cream cheese and dill, or on homemade sushi for an extra burst of flavor. The faux roe pearls even last well in the refrigerator. This Recipe Is:
|Cook’s Delight® Supreme Shrimp Base SF-228
- 1 cup Cook’s Delight® Shrimp Stock (1 cup water and 3/4 tsp Cook’s Delight® Supreme Shrimp Base)
- 1/2 oz powdered gelatin
- 1/4 tsp paprika
- 1/2 tsp tomato powder (substitute a few drops of red or orange food coloring if unavailable)
- 1/2 cup vegetable oil
Cook’s Delight® Supreme Shrimp Soup Base
Cook’s Delight® Simply Chipotle Chili Pepper Flavor Concentrate
Pour oil into clear container and place in a freezer for a half hour. Oil should become more opaque but still be fluid.
Combine Cook’s Delight® shrimp stock, paprika, and tomato powder in a sauce pan. Whisk over low heat to combine.
Slowly incorporate powdered gelatin while whisking.
Bring mixture to a boil. Note the consistency of the liquid after it has begun to boil. The mixture will thicken the longer it is on the stove. You may need to thin it back to the original consistency if it evaporates too much.
Remove oil from the freezer, put tip of applicator into the oil, and slowly drip the boiling liquid into it. Use a syringe, eye dropper, or injector for best results. Use varying pressure to control droplet size.
Evenly space droplets amongst the oil; newly administered ones will combine if they touch. Once the bottom of the container is covered in droplets, pour over a mesh strainer to drain.
Serve faux roe as an appetizer, on hors d’oeuvres, or on sushi. The options are limitless!
