  • 1 tsp olive oil
  • 1 boneless beef roast (3 lbs)
  • 1 tsp sea salt
  • 1/4 tsp ground black pepper
  • 2 cups onions - cut into chunks
  • 1 cup red wine
  • 4 thyme sprigs
  • 3 cloves garlic - chopped
  • 2 cups water - hot
  • 1 tsp Cook’s Delight® Beef Soup Base (add to the 2 cups of hot water to make beef broth)
  • 1 bay leaf
  • 4 large carrots - peeled & cut into chunks
  • 2 lbs Yukon gold potatoes - peeled & cut into chunks

Step by Step Instructions

Step 1

1. Preheat oven to 350°F.

Step 2

2. Put olive oil in a dutch oven and heat it on the stove over medium heat.

Step 3

3. Put roast in pan and add salt and pepper to the roast.

Step 4

4. Cook roast until it is browned on all sides.

Step 5

5. Remove roast from pan and set aside.

Step 6

6. Put onions into pan and sauté until tender.

Step 7

7. Return roast to pan and add all remaining ingredients EXCEPT the potatoes and carrots.

Step 8

8. Bring to simmer. Cover dutch oven and put into the oven for 1 1/2 hours, until roast is almost tender.

Step 9

9. Add potatoes and carrots and cook an additional 1 hour until vegetables are tender.

Step 10

10. Discard thyme springs and bay leaf and serve.
