Ingredients

  • 1 - 1/2 lbs Yukon gold potatoes cut into chunks
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp cracked black pepper divided
  • 4 skinless salmon filets
  • 2 tbsp minced garlic divided
  • 2 tbsp fresh chopped parsley
  • 1/3 cup freshly squeezed lemon juice
  • 1/2 cup melted butter
  • 18-20 asparagus spears cleaned with ends removed
  • 1/4 cup chicken broth (Mix 1/4 tsp Cook's Delight Chicken Soup Base with 1/4 cup hot water)
  • quartered lemon for garnish

Step 1

Preheat oven to 400 degrees F.


Step 2

Toss potatoes, olive oil, 1/2 tbsp garlic, salt and 1/4 tsp pepper in a large bowl.


Step 3

Spread evenly onto a large rimmed baking sheet and roast until softened and brown. Approximately 15-20 minutes.


Step 4

While potatoes are baking, combine 4 tsp of the lemon juice and 1/4 cup melted butter.


Step 5

Rub salmon with remaining garlic and parsley.


Step 6

Remove potatoes from oven and push to one side of baking sheet. Place salmon in the middle and asparagus on the other end.


Step 7

Pour lemon juice and butter combination over the salmon and asparagus. Season everything with pepper.


Step 8

Return to oven and bake until potatoes are golden brown and fork tender, approximately 10-15 minutes. Salmon should be opaque throughout. If desired, broil for last 2 minutes to char edges.


Step 9

While dish is cooking, combine remaining butter, lemon juice and chicken stock.


Step 10

Remove from oven and pour some of the butter, lemon and chicken stock over the finished dish and serve the rest with the meal along with lemon quarters.
