Quinoa with Mushrooms and Leeks is a dish that can be enjoyed as a side dish or main course. Leeks compliment the flavors of mushrooms and quinoa. The recipe is vegetarian but you can also add cooked chicken for some variety in your menu.  Healthy and delicious! Ingredients

  • 2 tsp olive oil
  • 3 leeks - washed and chopped (use white and light green part of leek - separate leaves and rinse in bowl then chop)
  • 4 cups mushrooms (shitake and crimini are tasty)
  • 1/4 cup parsley - minced
  • 1/2 tsp black pepper - divided
  • 1 cup uncooked quinoa
  • 1 - 1/2 cups water
  • 2 tsp Cook's Delight® Organic Vegetable Base
  • 2 tsp lemon juice - freshly squeezed
  • 1 cup cooked chicken breast - diced (optional)

Step 1

Heat olive oil in a large skillet over medium-high heat. Add leeks and reduce heat to medium. Stir occasionally and cook until softened and translucent - about 10 minutes.


Step 2

Add mushrooms to skillet and cook. Stir occasionally until mushrooms soften - about 10 minutes.


Step 3

If adding cooked chicken to the recipe. Stir it in now to combine with mushrooms and leeks and heat to warm.


Step 4

Remove from heat and add parsley and half the pepper. Toss and set aside.


Step 5

While leeks and onions are cooking, rinse quinoa and put in medium sauce pan with water, Cook's Delight® Vegetable Base and remaining pepper. Bring to boil stirring occasionally.


Step 6

Cover quinoa and reduce heat to simmer for 15 minutes or until moisture is gone.


Step 7

Remove from heat and fluff with fork.


Step 8

Add vegetable mixture that have been set aside to quinoa. Add lemon juice. Gently combine.


Step 9

Enjoy as side dish or main course!
