Ingredients
- 2 lbs salmon fillet - skinless (ask your grocery to skin the fillet for convenience)
- freshly ground black pepper
- 1/4 cup extra virgin olive oil
- 1/2 tsp Cook’s Delight® Supreme Roasted Garlic Flavor Concentrate
- 2 tbsp freshly squeezed lemon juice
- 6 scallions (use whole scallion) - minced
- 3/4 oz (1 pkg) fresh dill - minced
- 3/4 c fresh parsley - minced
- 1/3 cup white wine
- lemon wedges served with salmon

Step by Step Instructions

Step 1
Preheat oven to 425°F and Prepare Marinade
Step 2
Measure 1/4 cup extra virgin olive oil in a microwaveable measuring cup or pour into microwaveable dish after measuring.
Step 3
Add Cook’s Delight® Roasted Garlic Flavor Concentrate to the olive oil and microwave for a brief time, approximately 7 seconds to soften garlic concentrate.
Step 4
Stir in lemon juice and set aside.
Step 5
Skin the salmon if it has not been pre-skinned.
Step 6
Place salmon in an oven-safe baking pan dish (glass, ceramic, stainless-steel).
Step 7
Season salmon with fresh ground pepper.
Step 8
Stir garlic, lemon and oil mixture until garlic concentrate is broken up. If needed, microwave a few more seconds. Be careful, too long in the microwave will burn the garlic concentrate.
Step 9
Pour the mixture over the salmon and let stand at room temperature for 15 minutes.

Prepare Herbs

Mince the scallions, dill and parsley and combine in a bowl.
Step 12
Put 1/2 of the combined herbs on the salmon. Turn salmon over and put the remaining herbs on the other side. Both sides should be generously covered with herbs.
Step 13
Pour the wine around the salmon while drizzling a little bit onto the salmon.
Step 14
Place salmon into preheated oven. Cook for 12-15 minutes.
Step 15
Check for doneness. The thickest part of the salmon will be slightly uncooked at the center. Cook for a few more minutes, if needed.
Step 16
Remove the salmon from the oven and cover with foil. Let stand for 8-10 minutes.
Step 17
Serve with lemon wedges.
